So after a quick re-jig of the army, I had my first two practice games with the below list:

My first two practice games were vs 5 Imperial Knights!
2 Gatling Cannon Knights, 1 combat knight, 1 with melta cannon and the last one with the rapid fire battle cannon.
I don't know there names haha.
We were playing mission one of the Skorched Skies mission pack, Emperors Relic, it combines both the Emperors Will objectives with the Relic.
Vanguard strike deployment.
GAME1:
Deployment and Turn1:
My opponent won the roll and went first, he deployed on the line, with all 5 knights.
I deployed the Farseer (who had rolled Invisibility), 3 D-cannons and the Wraithknight, he chose to go first and threw everything into the Wraithknight, causing a single wound.
My turn1 and I caused a D hit to a knight, causing 3 HPs.
TURN2:
My opponent continues to push forwards, killing all 3 D-cannons, through combat and shooting, but the Wraithknight was just out of charge range so survived. The Farseer was able to hide out of site after seperating from a D-Cannon crew.
My turn2 and I get everything on from reserve, bar the Warlock. All 6 units of Warp Spiders came and scattered safely or landed on point.
Shooting was pretty brutal, with 3 Knights being killed, 1 from the Wraithknight rolling a 6, the 3hp knight being stripped of HPs from Windriders and the last knight to go down via 4 Warp Spider units, my opponent chose front armour and they were behind.
In the assault phase I spread out as much as I could.
TURN3:
So my opponent was caught in no mans land with two Knights, so he pushed up towards 2 units of Spiders, didn't shoot and killed both units in combat. (rolled a tripple 4 6's on his stomps... after rolling poorly to hit/wound with his regular attacks...
My turn3 and he was surrounded, the Windriders and Warp Spiders killing both knights before the Wraithknight was even needed!!
Tabling win!
GAME2:
Same mission etc
Essentially the same result, the Wraithknight killed a knight in my turn1, I deployed more defensively with the D-Cannons, as did my opponent who stayed a little more together. Not allowing me to easily isolate his Knights (the formation gave him +1 to his Invul save).
But again, I was able to get side/rear armour and was able to HP strip Knights over the course of 3 turns.
Although these games were pretty simple victories it helped decide in my head that one of the worst match ups for me, I was able to pull out a convincing win. I want to play Knights againt another opponent/list, so I've challenged another knight player to a game next week!
